HOW TO MAKE A SIMMER POT
1.    Fill a small saucepan or stockpot halfway with water.
2.    Add aromatic ingredients.  Quantities are flexible – use more for a stronger fragrance or less for a lighter scent.  Small ingredients may be contained in a large ball infuser for easy removal after simmering.
3.    Place the pot on the stove and bring to a gentle simmer over low heat.  Do not let it boil.
4.    Simmer for several hours, adding water as needed so the pot doesn’t run dry.

NOTES:
Never leave a simmer pot unattended for long periods, and turn stove off before leaving the house or going to bed.
Aromatic ingredients can be re-used for a day or two – just refrigerate and reheat with fresh water.
