Celery Flake

Although many varieties exist, commercial production is usually dominated by pascal celery. Celery (along with bell peppers and onion) is part of the "Holy Trinity" used in Cajun cooking, as well as a main ingredient (along with carrots and onion) in the mirepoix base used in French cuisine. The dried flakes and stems add a wonderful concentrated flavor to many dishes.
